Tai Tapu School is famous in the area for its gingerbread competition held every year on Pets’ Day. Here’s a simple but traditional gingerbread recipe for the kids to make on the day.
Preparation time: 25 minutes (includes the cooling time)
Cooking time: 12 minutes
Makes: around 20
3 Tbsp golden syrup
75g caster sugar
1 tsp cinnamon, ground
1½ tsp ground ginger
1 tsp mixed spice
½ tsp baking soda
225g plain flour, sifted currants or chocolate pieces to decorate
Preheat the oven to 160°C.
In a large saucepan gently heat the golden syrup, sugar, 1½ Tbsp water and the spices.
Bring to the boil, stirring well. Remove from the heat and add the butter and baking soda. Add enough of the flour to make a firm dough, then set aside to cool for a few minutes.
Roll out the dough and cut it into gingerbread men shapes with a cookie cutter.
Decorate with currants or chocolate pieces as desired and bake for approximately 12 minutes or until golden and crisp.stream.
Get your children to draw an outline of their gingerbread person on a piece of paper.
With a pair of scissors cut around the outline, then place it on top of the dough and cut around it with a knife. Use coloured icing and lollies to finish. Over the years we’ve had ballerinas, motorbike riders, Bart Simpson and – my personal favourite – Sonny Bill, complete with liquorice hairpiece.
