Asian Pork Lettuce Wraps
A quick tasty lunch the whole family will enjoy.
Preparation time: 30 minutes
Cooking time: 20 minutes
1 Tbsp sesame oil
300g pork mince
1 Tbsp grated ginger
2 Tbsp soy sauce
2 Tbsp oyster sauce
1 Tbsp hoisin sauce
2 spring onions, sliced
1 carrot, grated
2 Tbsp chopped fresh coriander
2 Tbsp chopped fresh mint
1 x 320g can water chestnuts, thinly sliced
1/4 cup roasted peanuts, chopped
12 lettuce leaf cups
handful of crispy noodles to serve (optional)
Heat the sesame oil in a frying pan until hot. Fry the pork mince and ginger until browned, about 5 minutes. Stir in the soy, oyster and hoisin sauces and cook for 2 minutes, then remove from the heat.
Stir through the prepared vegetables, herbs, water chestnuts and nuts.
Arrange the lettuce cups on a platter. Divide the mince mixture between them and garnish with the coriander, carrot and noodles, if using.
